Day #801 on Carnivore Getting Ready for Snow? Friday, 1/23/26

It’s been a minute since I’ve posted. I know, I’ve been slacking, but sometimes there really is nothing new to post about. When something starts to feel like a job or something that I have to do, I tend to leave it alone for a while.

It looks like I’m finally going to get my cold spell. I’m ready!! I have food, and my fuel tank is full.

I felt like having baby back ribs yesterday, so that’s what I cooked in the air fryer. It was really good.

Since I have never used my sink setup, I decided to remove it. Now I have more counter space, and I can use the space under the sink that housed the water container for other things. I’m usually parked at a campground and have access to running water and a table to use.

This is usually my dishwashing, etc., area.

This is a little two-shelf plastic cabinet I found on Amazon. It’s small enough to fit between the front seats and is the perfect height for an armrest. It’s very light, so I can move it if I need to reach the front seat without leaving the van.

I’ve spent the summer getting rid of stuff that I thought I would need. It was really getting hard to close my rooftop carrier. That’s what happens when you plan this way of life years before you actually get a camper. You end up wasting money on things that you just know you will need, but you really don’t. I can now close it without problem and have room to spare, if I need it.

This is my EcoFlow Delta Max 2000 generator. The biggest draw is my fridge/freezer, which stays plugged in 24 hours a day. For the past week, the EcoFlow has shut off once it drops to 79%, so when I wake up in the morning, the fridge is off. Not a good thing, but luckily it’s not been hot lately.

The software is up to date, so that wasn’t the problem. I’ve been told that it probably has a calibration issue with the Battery Management System (BMS). I’ll need a plug that converts 50 amps to 30 amps, since I only have one regular outlet and one 50-amp outlet at this campsite. I want to be able to plug my small appliances into one outlet and then plug the EcoFlow into the second. I need to discharge and recharge the generator two or three times without interruption. I’m waiting for a plug and for the weather to be clear before I tackle this, probably later next week. Hopefully, this will fix it. If not, that generator will be expensive to replace.

For now, my fridge is plugged into the campsite electricity, which is fine unless the electricity fails over the next couple of days during this coming bad weather. It’s good to have backups for your backups. I can always idle the van and use the included 1,500-watt inverter.

Here I am all tucked in for whatever!! In Livingston, Texas. I’m so glad to be in my minivan!!! My poor neighbors are busy scrambling to find propane for their heaters and doing things to keep their poop and water tanks from freezing up. The only things I did to prepare for whatever, was making sure I had a full fuel tank and a couple of gallons of water….just in case.

I’m thinking of going back up to Princeton, Texas, next month. Last time I waited too long, and it was already too hot for me when I got there. This time, I want to go earlier to spend some time with T-Jay before it gets hot.

The campground I like to stay at while I’m there is doing some upgrades, like installing concrete pads for the empty lots. Hopefully, a space will be ready for me by the first of the month. If not, I might stay here another month to enjoy the $400-a-month rent… Or I will find another campground.
