Nasty, Rainy Tuesday 03/04/25

It’s 10 o’clock and I haven’t even been outside yet. The 16 miles an hour sure made my van rock, it was a bit bouncy here. Luckily I can stay inside until it’s over and there is nothing that I have to go out for that can’t wait. I showered last night knowing the weather was going to be bad this morning. My trash is bundled up and can go to the dumpster later.

My fan kicked the bucket last night. This is the second fan I bought and both only lasted seven months. I won’t be buying another one!!

I always have a backup. This little fan on top of my console works really well. I intended to put it in the back window, but it works fine where it sits. It was also way cheaper than the other one.

I found a cheese that I love. It cooks really well in the air fryer.

I sliced the cheese into strips and then wrapped them with bacon.

This was a feast. Dan from down the block brought me some salmon that he had grilled. Perfect Sunday dinner including a half a stick of butter.

The day before, I baked an almost no-carb cheesecake in the air fryer to share with Dan. I’m always amazed by what can be cooked in this thing.

This is the recipe I used, except I didn’t use that much Monkfruit.

Ingredients:
24oz cream cheese
1/3 cup Monkfruit Sweetener
1/4 cup Heavy Whipping Cream
3 Large Eggs
1/4 tsp sea salt

Instructions:
1. Add all ingredients to a large bowl and beat on high until smooth.
2. I have a couple of glass containers that fit in the air fryer that I fill up with the mixture.
3. Place the filled dish in the air fryer.
4. Select the “AIR FRY” mode, set to 320°F for 30 minutes, and press the “START” button.
5. When finished, take it out and let it cool in the tray for 15 minutes. Refrigerate for at least 2-4 hours, best overnight before enjoying.

I will be baking this again, maybe once a month. It turned out creamy and delicious.

Last Wednesday, I removed the mats I had put in the van. They were hard to clean and had faded in the high traffic areas.

Here are the new mats installed. The more I live this way, the more I learn. I did not glue these down and the material it is made of keeps it from sliding around.

They really stay put!! So easy to clean!!

I am always looking for ways to maximize my space. I found the world’s smallest coffee press. It’s called the Final Press.

I add about 4 teaspoons of coffee.

Screw it together.

Set it in my coffee cup and add boiling water.

Then I let it sit for a few minutes. After twirling it around and squeezing the grounds, I have a great cup of strong coffee. I donated my coffee maker and this takes up so little space.

I checked the Immigration website to see how long it would take to get my document. It’s still saying it will take 6 1/2 months. I know there is no way I will stay in Texas until August. I think I will head to Wyoming and higher altitudes, where it will be cooler.

Ha, the wind and rain just stopped. Long enough to go outside and remove my window coverings. That’s better!! Less doom and gloom!!
