
Good bye Keurig!! I know that van-life is still a ways away, but every once in a while I find something “Van Worthy”. I love my K-cup coffee. The Keurig takes quite a bit of electricity and I’ve been looking for a low wattage coffee maker to take into the van. I really don’t like the taste of the drip coffee makers and was trying to figure out a way to take my Keurig. Another thing that had me worried is the space that it would take up. Not to mention how hard it is to clean since you really can’t take it apart. Well, my worries are over. I found a way to make a descent size cup of coffee.





And there you have it. A delicious cup of coffee in a few minutes. The only thing I have to worry about is hot water.
I made Crust-less Quiche yesterday. Enough for lunch for the week.



I added a small bag of frozen spinach on top.


I had never eaten this before and it was really good. Next time I will leave out the spinach. 🙂
Then I made chocolate chia pudding.



I used monk fruit and half whipping cream and water to cut down the carbs. It’s delicious!!
I picked up and removed nine buckets full of rocks from the front yard yesterday.

There is an uneven spot in the back yard where it was impossible to even out stepping stones to walk to the back gate. The tree has these crazy running roots. So I put the rocks in stones in that spot.

I’m going to Lowe’s when they open up and see about some rubber mulch to put in the front yard. I wonder how much a bag of that weighs and how many bags I can fit into the back of my poor little Prius.

^^^This is the stuff I bought this morning. It wasn’t as heavy as I thought it would be.

Ten bags fit fine in the back of my Prius.

It took only six bags. Then I went to remove some of the vines that are attached to the front of my house.

I ran out of garbage cans, but I removed what I could.


I have two bags of mulch left. Maybe I will finish it this week after work…..if I feel like it.
On my way to Lowe’s this morning I found out that we now have a Big Lots. I stopped by and found a couple of jars of Bavarian Sauerkraut. I fried it up with some bacon.

The thing that I like about this brand is that you don’t have to wash it. It’s not that nasty sour of some of the brands.
Fried up some bacon and put it right in the pan. Good stuff!!
